Thanksgiving (vegan style)

So with thanksgiving coming up, I would like to give you guys a few pre-made suggestions:

 

 

Quick Thanksgiving Wraps:

  • this is for those whom aren't in need of a tricked out thanksgiving meal:

  •  
  • vegan faux “turkey slices” [vegan cold cuts]
  • cranberry sauce
  • stuffing [make sure it contains ONLY vegan ingredients]

 

put a teaspoon of stuffing, and cranberry sauce in the middle of the turkey slice. Fold the turkey slice in half like a mini taco, and wha-la a quick “thanksgiving” inspired snack.

 

 

Kroger:

I've been to a couple of stores in search of vegan products, and so far it seems that Kroger Marketplace has the best selection. Once you find their health food section, check out the freezer case for some fake turkey products. One really cool product is a fake turkey dumpling filled with stuffing, and cranberry sauce (quick, easy, done) !.

 

Krystal's Vegan Green Bean Casserole:

While there are some vegan gravies out there, my version of this casserole has the health benefits of split peas instead of a nutritionally dense gravy. However, if you hate split pea soup (try this first !) feel free to substitute.

 

½ cup split pea soul [make sure it is vegan, check out Kroger Marketplace in the health food area]

¼ cup French fried onions

1 cup frozen Italian style green beans

sprinkle of sea salt

margarine spray

 

Cook the green beans in the microwave for 3 minutes with a tablespoon of water. Sprinkle a little salt on the green beans, spray the green beans with 5-10 sprays of margarine, top the green beans with ½ cup of heated split pea soup. Garnish the top of the casserole with ¼ cup of French fried onions.

 

Serving: 1

 

I am OBBESSED with this dish, and I HIGHLY recommend that you guys try it out. Its low fat, so you can have it as a side dish anytime. The split pea soup makes it taste so savory that you may feel a bit guilty eating it :-)
